I used Four Sigmatic protein powder. It's made with mushrooms that are rich in nutrients!
The powder doesn't taste like mushrooms at all and has a sweet, slightly coconutty taste. Four Sigmatic's Vanilla Protein Powder has:
18 grams of a blend of 5 pure organic vegan proteins
a balanced amino acid profile
a high dose of 7 amazing mushrooms and adaptogens

What You Need For Homemade Protein Granola Recipe
You can make this your own way, but the key to a good granola is having the proper ratio of ingredients. Especially because there are both dry and wet ingredients needed to make your own granola.
For my go-to high protein granola, I mix this together:
1.5 cups of rolled oats
1/4 tsp of salt
cinnamon to taste
.5 - 1 cup of peanut butter or other butter
1/2 cup pure maple syrup, honey, or agave
2/3 cup of Four Sigmatic Sweet Vanilla protein powder
a handful of pumpkin seeds, dried cranberries, and chocolate chips (about a quarter cup of each)
*NOTE: The more mix-ins you use, the more sticking agent you will need. It will be harder for the bars to stick together and remain in a bar shape...but will still be a yummy granola snack!
What To Do
Mix all of the dry ingredients in a large bowl
Add in nut butter and maple syrup and mix well
Spoon the mixture onto a tray with wax/parchment paper and flatten
Cover with another layer of wax/parchment paper
Freeze for 4-5 hours
Cut into bars and store in an airtight container in the fridge for the week!
If some of the bars don't hold well (this happens sometimes) use your creation as a granola snack on yogurt or by itself!
